Brussel Sprouts

You wouldn't think these were a good vegetable for cooking in a wok - but actually they are!

You need about 350g (12oz) brussel sprouts - preferably smallish and tight. Trim as usual and cut in half lengthways.

Heat the wok on high. Add about 4 tbsp olive oil. When the oil is good and hot dump in the brussel sprouts. Cook for 5 minutes turning and stirring continuously, until they are sort of patchy golden brown on the outside.

Add about 2 tsp soft brown sugar and a good serious pinch of salt. Keep tossing and stirring for another minute.

Add 60ml (1/4 cup) of Chinese cooking wine and 60ml (1/4 cup) water. Once the liquid is boiling well, cover the wok and turn down the heat to about half. Cook like this for about another 5 minutes, stirring occasionally and making sure that they don't run out of liquid.

Delicious - not quite as healthy as steamed brussel sprouts, but a nice change sometimes!
